Ingredients

  1. 2tomatillos, husk removed and roughly chopped
  2. 1avocado, pit removed and scooped out
  3. 1jalapeno, seeds removed and roughly chopped (optional)
  4. 2 clovespeeled garlic (or 1 large clove)
  5. 1/3 cuppacked cilantro
  6. 1/2 cupmayonnaise
  7. 1/2 cupsour cream
  8. 1/4 cupmilk + more as needed
  9. 2 tbsp.lime juice
  10. 1 tsp.vinegar (I use apple cider vinegar)
  11. 2 tsp.dried parsley
  12. 1 tsp.dried chives
  13. 1/2 tsp.salt
  14. 1/2 tsp.pepper
  15. 1/2 tsp.dried dill
  16. 1/2 tsp.smoked paprika

Cooking Instructions

    Combine everything except for the milk in the blender or food processor and blend/pulse until everything is well combined. Scrape down the sides as needed. Then while it's running, pour in the milk. If you'd like to thin it out a bit more, then add more milk in about 1 tbsp or so at a time until your desired consistency is reached. Taste once done and add anything additional you think it might need.

    Let this chill in the fridge for a couple of hours before serving.

    Store any leftovers in the fridge. This will last about a week.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights.
