Ingredients

1 serving
  1. 1 cupsquash, cut into pieces (about 200 grams)
  2. 1 1/2 cupswater for the stew (about 355 ml)
  3. 1/2 cupquinoa (about 85 grams)
  4. 2 cupswater for the quinoa (about 475 ml)
  5. 1 1/2 cupsalmond milk (about 355 ml)
  6. Salt, to taste
  7. 1small bay leaf

  1. 1

    In a small saucepan, add the water and squash pieces. The water should just cover the squash—don’t add too much, as squash releases water. Add the bay leaf and bring to a boil. Cook until the squash is soft.

    Rinse 1 cup of quinoa thoroughly. Wash the quinoa several times until the water runs clear to remove its bitter taste.

    In another small saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil.

  4. 4

    When the quinoa is cooked and most of the water is absorbed, drain it in a strainer to remove any excess water. Set aside the cooked quinoa.

    When the squash mixture is cooked, blend it until smooth to make a creamy soup.

  6. 6

    When the soup is thick, add salt to taste, then stir in the cooked quinoa. Gently fold to combine.

    Serve hot.
