Quinoa with Squash

In a small saucepan, add the water and squash pieces. The water should just cover the squash—don’t add too much, as squash releases water. Add the bay leaf and bring to a boil. Cook until the squash is soft.

Rinse 1 cup of quinoa thoroughly. Wash the quinoa several times until the water runs clear to remove its bitter taste.

In another small saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil.

When the quinoa is cooked and most of the water is absorbed, drain it in a strainer to remove any excess water. Set aside the cooked quinoa.

When the squash mixture is cooked, blend it until smooth to make a creamy soup.

When the soup is thick, add salt to taste, then stir in the cooked quinoa. Gently fold to combine.

Serve hot.
