One-Pot Chicken, Leek and Beans

Inspired by the communal style of eating around food with flatbread in Arabic and Mediterranean culture, I was inspired to use humble leftover ingredients to make this one-pot dish.

Inspired by the communal style of eating around food with flatbread in Arabic and Mediterranean culture, I was inspired to use humble leftover ingredients to make this one-pot dish.
Steps

First, pan fry the salted chicken thighs in olive oil over medium heat. Though not necessary, if you are looking for a golden-brown crisp, take your chicken out of the fridge and salt 30+ mins before cooking. Pat dry with a paper towel before cooking.

Once cooked, take out the chicken and stir fry the garlic before putting in the leeks, cumin and oregano.

Once the leeks release some water, deglaze and scrape the fond off the bottom of the pan and add in the beans.

Cook for another few minutes before adding in the butter and lowering the heat.

Add the chicken thighs back in the pan and kill the heat. Pour the juice of 1/2 a lemon and enjoy with flatbread!
