  • ●Pizza dough
  • 150 g rice flour
  • 50g potato starch
  • 5 g sugar
  • 3g salt
  • 5g dry yeast
  • 10g olive oil
  • 100cc lukewarm water
  • ●Toppings
  • 70g fava beans
  • 50g cream cheese
  • 40g blended cheese
  • 15g coconut chips
  • 30g kombu and shiitake tsukudani
  • ●Filling for the dough
  • 100g sweet red bean paste
  • 2leaves salted cherry leaves
  • ●Miso sauce
  • 10g Miso
  • 10g sugar
  • 5g sesame seeds

    Measure all dough ingredients and mix them together until well combined.

    Let the dough ferment for about an hour.

    Divide the dough into two equal parts, roll them out, and sandwich the sweet red bean paste and cherry leaves between them.

    Bake in a 200°C (392°F) oven for about 15 minutes.

    Grind the sesame seeds, add sugar and miso, and mix thoroughly.
