Steps
- 1
Wash the mutton thoroughly with water. Peel the garlic. Separate the onions. Slice two onions thinly.
- 2
Add salt and ground cinnamon to the mutton, cover, and let it rest for 15 minutes. Mix in the ginger-garlic paste as well.
- 3
Heat oil in a pressure cooker. Add all the whole spices and sauté. Add the mutton and sauté for five minutes. Add the peeled garlic cloves.
- 4
Add the thinly sliced onions and sauté. After four to five minutes, mix in all the powdered spices and sauté. Cover and cook the mutton on medium heat in the pressure cooker until you hear seven whistles.
- 5
In a separate pan, heat a little oil and sauté the large onion chunks for 1 minute. Keep the onions separate. Once the mutton is cooked, open the pressure cooker and add the sautéed onion chunks. Cook for another two minutes. Mix in the chopped cilantro. Mutton Do Pyaza is ready to serve.
