California Farm Harissa BBQ Ribs

This is my favorite summer barbecue lemon pepper honey dry rub glaze: tangy, sweet and lemony fresh. Because pork spare ribs are juicier and fatter than lamb or chicken, I sear barbecue unglazed pork spare ribs till brown, 5 minutes each side, then turn the air vents down in the barbecue, apply the glaze, grill the ribs till meat separates from the bones, about 2 hours. Wrap slabs whole in aluminum foil, rest 30 minutes, then slice the ribs.

Ingredients

10 min sear, 2 hour grill, 1/2 hour rest
36 ribs
  • 2slabs pork spare ribs, 11 pounds
  • 1 Tspeach flaked seasalt, pepper, cumin
  • 1large navel orange for zest and juice
  • 1 cupharissa paste, home made
  • 1 cupstar thistle honey
  • 1charcoal chimney with mesquite charcoal
  • Equipment: barbecue, brush, aluminum foil
  • Cost: ribs $36, glaze $4, charcoal $4, $1.40 per spare rib appetizer

Steps

10 min sear, 2 hour grill, 1/2 hour rest
  1. 1

    Wash and dry two whole slabs of ribs and rub with cumin, salt, pepper. Heat charcoal till white hot, lay slabs of ribs over the hot coals, 5 minutes each side till browned, lift off to glaze, close air vents on grill to half.

    Make harissa: scrub lemon, blister poblano chili peppers, put in food processor, add spices, puree.

    Make glaze: warm star thistle honey, pressed orange juice, zest, and harissa till sticky, brush all over the browned pork slabs till juices are sealed in by glaze.

    Grill the pork slabs: cover of your grill should be warm, not hot, lay glazed slabs with meaty side up and rib side down. Grill till meat separates from the bones, about 2 hours.

    Wrap the whole pork slabs in aluminum foil, rest half an hour under kitchen towels to cook through while keeping hot. Then slice into individual juicy, meaty, tender ribs and serve. Serve as finger food.
