Chicken Bacon Ranch Sandwich (gluten free, dairy free)

Preheat grill to 500 degrees Fahrenheit.

Place chicken in pan or bowl. Add basalmic vinegar and olive oil. Add salt and pepper. Toss chicken so both sizes are covered.

Place prepared chicken on hot grill and cover, allowing each side to sear over high heat for two minutes each. After both sides are seared turn off half of the grill and place chicken on the other side on that side so it can cook at low heat. Cover grill and cook for approximately 8 minutes on each side. When fully cooked place on a plate and cover with foil and let rest for five minutes. Cut into sandwich size sections. 4-6 ounces are a good size.

While chicken is cooking or your grill is preheating you can cook bacon strips on medium heat in a small frying pan.

Optional: Cut brioche roll in half and place center side down on grill until edges start to char. Remove from heat.

Mix mayonnaise and dairy free ranch together. Add half of mixture to bun.

Layer a 4 ounce section of chicken breast, bacon, and micro greens into sandwich. Can add additional toppings like tomatoes, onions, etc. if desired. Enjoy!
