Ingredients

2 servings
  1. 2 piecesChicken thighs
  2. 1large, halved Sweet potato
  3. 150g, chopped Asparagus
  4. 200 gMixed beans
  5. 100g, halved Cherry tomatoes
  6. 1, diced Bell peppers
  7. 2tablespoons, chopped Fresh herbs (e.g., parsley)
  8. 2 tablespoonsOlive oil
  9. to taste Salt and pepper

Cooking Instructions

    Preheat oven to 200°C (390°F).

    Season chicken thighs with salt and pepper, then roast until cooked through.

    Roast sweet potato halves until tender.

  4. 4

    Sauté asparagus in olive oil until tender.

  5. 5

    Mix beans, cherry tomatoes, bell peppers, and herbs in a bowl.

    Serve chicken with sweet potato, asparagus, and bean salad.
