Cheddar Cheese Cake with 2 Eggs

Here's my experience 😂😂 I once made a CCC but it was a successful failure. It actually rose beautifully but wasn't firm, so it turned out mushy and couldn't be taken out of the pan, but it was still edible, soft, and very cheesy. I think I used too much cheese because I was supposed to use 100 grams, but I used 175 grams, which was the whole package. That was three years ago when I was still inexperienced. I was traumatized for a long time, but I always got tempted seeing JCC/CCC. I drooled looking at it. Making JCC is hard here because there's no cream cheese, and it's expensive. If it fails, it's such a waste.

Ingredients

  • 2large eggs (separate yolks and whites)
  • 1/4 cupall-purpose flour (about 35 grams, you can substitute 10 grams with cornstarch)
  • 1/4 cupKraft cheddar cheese (about 35 grams, I used 38 grams)
  • 2 1/2 tablespoonsbutter (about 35 grams)
  • 3 tablespoonsmilk (about 45 - 50 ml)
  • 3 tablespoonssugar (about 40 grams, 45 grams if you like it sweet)
  • 1/4 teaspoonlemon juice

Steps

    NOTE: The eggs must be large, at least 60 grams each. Mine were small, so I used 2 yolks + 2 egg whites.

    Grate the cheese finely to melt easily. Melt it with butter and milk. Let it cool to room temperature while stirring to cool faster.

    Add the egg yolks one by one, stirring gently with a whisk until smooth. Do not stir too hard! Sift in the flour and mix gently with a whisk until smooth. Set aside (I added a little milk paste).

    In another bowl, beat the egg whites and lemon juice until foamy. Add the sugar in 3 stages, not all at once, and beat until soft peaks form.

    Fold 1/3 of the egg whites into the yolk mixture. Fold gently (add the egg whites in 3 stages, not all at once) until well combined. Pour into a pan greased with margarine, lined with baking paper, and greased again.

    Bake using a bain-marie technique (place a wide pan with 1 cm of water, then place the pan with the batter on top). Bake for 45 - 50 minutes, depending on your oven (I use an old oven without a temperature setting). If using a traditional oven, the temperature is about 320°F (160°C).

    In the last minute, open the oven and touch the cake surface. If it makes a hissing sound, it's not done yet. Bake until the surface is firm when pressed.

    Remove from the pan, let it cool, then slice. 😘😘 I lost my cake knife 😭😭 so I used a fruit knife 😒 and the slices turned out ugly.

    Sprinkle with powdered sugar and add strawberry jam. 😘😘 It's a perfect match, especially when refrigerated. Yumii 😋😋
