  • To Blend Together:
  • 1Large Banana
  • 1/2 cup Yogurt
  • 1/2 cupRaw Sugar
  • 1/4 cupGhee
  • Other Ingredients:
  • 1 tspVanilla Essence
  • 1 cupSemolina (Sooji)
  • 1 tspCinnamon Powder
  • 1 tspBaking Powder
  • 1/2 tspBaking Soda
  • 1/4 cupFull Cream Milk (divided)
  • 12Halved & Chopped Walnuts
  • 2 tbspGolden Raisins
  • Toppings:
  • 2Halved & Chopped Walnuts
  • 7–8 Golden Raisins
  • 1 PinchSaffron Strands

Steps

Total Time: 45 mins Bake Time: 25 mins

    Grease & Line the Pan:
    Grease a cake pan with ghee. Place a baking paper and grease again. Set aside.

    Preheat the Oven:
    Preheat the oven at 180°C for 10 minutes.

    Blend Wet Ingredients:
    In a blender, combine banana, yogurt, raw sugar and ghee. Blend until smooth.

    Add Semolina Mix:
    Transfer to a bowl. Add vanilla essence, semolina (sooji), cinnamon powder and 2 tablespoons full cream milk. Mix well and let it rest for 15 minutes.

    Adjust Batter Consistency:
    After resting, add 2 more tablespoons milk (or as needed) to get a soft batter.

    Add Leavening Agents:
    Add and gently mix in baking powder and baking soda.

    Fold in Dry Fruits:
    Fold in halved & chopped walnuts and golden raisins.

    Pour & Decorate:
    Pour the batter into the greased pan. Tap twice to release air.
    Top with chopped walnuts, golden raisins and a pinch of saffron strands.

    Bake the Cake:
    Bake at 180°C for 25 minutes or until a toothpick inserted comes out clean.

    Cool, Slice & Serve:
    Cool the cake completely. Demould, slice, and serve with your favorite beverage.
