🌼 Khandvi – Soft, Spicy & Looks Fancy, Done Fast
This one’s a lifesaver when I want to make something light, healthy, and impressive without stressing out.

In a bowl, mix besan, turmeric, salt, ginger paste, green chilli, and slowly add water. Whisk until super smooth.

Cook the batter in a pan on low heat. Keep stirring to avoid lumps. It should turn thick like a gel.

Quickly spread the hot batter in a thin layer on a greased plate or steel tray.

Let it cool, then cut into strips and roll them gently.

For tadka: Heat oil, add mustard seeds, sesame seeds, curry leaves, and jeera. Let it sizzle.

Pour the tadka over the khandvi rolls. Garnish with coriander. Done.

Be quick when spreading! The batter sets fast, and cold batter = zero rolls. 🙃
