Ingredients

Serves 6 servings
  1. 1 1/4 cupsall-purpose flour (150 grams)
  2. 2 tablespoonsgranulated sugar (25 grams; you can use panela or increase up to 1/4 cup/50 grams)
  3. 1 tablespoonbaking powder (12 grams)
  4. 1 pinchfine salt (about 1/2 teaspoon or 2 grams)
  5. 2medium eggs
  6. 3 1/2 tablespoonsunsalted butter (50 grams)
  7. 3/4 cupwhole milk (200 ml)
  8. A fewdrops of vanilla extract (optional)
  9. Optional: Lemon or orange zest, chocolate chips

    How to make the pancakes

    In a bowl, mix together the dry ingredients: flour, baking powder, sugar, and salt. Set aside.

    In another bowl, whisk the eggs, melted butter, and vanilla extract. Add the dry ingredients and gently mix with a whisk until just combined.

    Pour in the milk and mix. Be careful not to overmix; it's okay if there are some lumps. Overmixing will make the pancakes tough. Add lemon or orange zest if desired.

    Cooking in the pan

    Heat a nonstick skillet or griddle over medium heat.

  7. 7

    Once hot, pour a ladleful of batter into the center of the pan, letting it spread naturally. Adjust the heat as needed throughout cooking.

    If the batter doesn't set when added, the pan is too cold. If the bottom burns before bubbles appear on top, the pan is too hot.

    When bubbles form on the surface, flip the pancake with a spatula. Cook for another 30 to 40 seconds on the other side, then remove from the pan.

    You can add fresh fruit, such as blueberries or raspberries, to the batter once it's in the pan. These make great toppings or mix-ins.
