First, heat ghee in a pan and roast the cashews until golden brown.

Put all the ingredients for making the chutney in a mortar and grind them with a pestle to make the chutney. Make the tomato puree.

Put oil in a pan and when it is hot, add cumin, asafoetida, ginger, chili paste and saute the onion. When it becomes soft, add 1 large spoon of the prepared chutney, add all the spices and saute.

When the oil separates, add tomato puree and cook for 3-4 minutes. When the oil separates, add curd, water and sugar and keep stirring. When it starts boiling, add cashew nuts, mix well, cover and let it cook for 4-5 minutes.

Now add garam masala and coriander, mix and add the gathiya. Mix well and switch off the gas. Remove in a serving plate and serve with paratha, salad and lassi.
