Shev Bhaji is a unique combination of thick sev and a spicy onion-coconut-based thin gravy that is quite popular in khandeshi Maharashtrian households. It is a great dish to make when you are out of fresh veggies and still want to make a nice curry for the meals.

First of all, Heat 1 tablespoon of oil in the pan and fry the roughly chopped onion, dried coconut flakes, garlic and ginger,green chillies slits in it until it turns golden.

When all this cools down, make a fine paste in a mixer grinder.. Now heat 2 tablepoons of oil in a pan, add cumin seeds, asafoetida, when it sizzles, add the prepared paste, add all the spices and mix. Saute till the oil separates. Then add one to 2 and a half cups(as required)of water and let it boil. Tari (rassa)is ready.

Now add 1/2 of sev to it and remove from heat after 2 minutes. Serve hot immediately. Then add sev as required. Khandeshi zanzanit sev bhaji(curry) is ready.
