Ingredients

  1. 6hard boiled eggs, peeled
  2. 1 tbspwhole mustard seeds
  3. 2-3finely chopped onions
  4. 1 tbspgreen chili paste
  5. 1 tspginger garlic paste
  6. 1/2 cuptomato puree
  7. 1/2 tspturmeric powder
  8. 1/2 tspKashmir chili powder
  9. 1/2 tspcoriander powder
  10. 1-2 tbspmustard oil
  11. 1 tsplemon juice
  12. 1/4 cupwater
  13. Salt to taste

Cooking Instructions

    Make shallow slits on the 6 hard-boiled eggs. In a small bowl, mix 1/4 tsp Kashmir chili powder, turmeric powder and coriander powder. Rub the mix gently on eggs. Heat 1 tbsp mustard oil to smoking point and lightly fry the eggs until golden and lightly crisp. Remove and set aside.note: when frying the eggs, be careful - they may split or pop if the oil is too hot. Fry on medium heat and keep a little distance for safety.

    Make the mustard tadka: in a small pan, add mustard oil and add mustard seeds let them pop, add finely chopped onions and saute until golden. Add ginger garlic paste and cook till the raw smell disappear. Add tomato puree, green chili paste and mix well, cook for 1 min. Add Kashmir chili powder, turmeric powder, coriander powder and salt mix and cook till soft and the masala is fragrant.

    Place the fried eggs into the masala. Add 1/4 cup of water and gently stir to loosen the masala. Spoon the mixture over the eggs, cover the pan and simmer on low heat for 4 mins, so the eggs soak in the rich flavors. Finish with lemon juice and garnish with fresh coriander leaves and a few drops of the spicy masala. Note: you can serve masala along with the eggs as a complete meal.

    Note: serve Black opal egg tadka with veggies rice for a bold, colourful and satisfying meal.
