Ingredients

  1. 4eggs, hard boiled and peeled
  2. 1avocado
  3. 1 cupcottage cheese
  4. 1 tablespoonthinly sliced Spring onions, chives or scallions, thinly sliced
  5. 2 tablespoonsLemon juice
  6. Kosher salt, to taste
  7. Ground black pepper, to taste
  8. Sourdough bread, sliced
  9. Chili flakes, to taste

Cooking Instructions

15 minutes

    Chop eggs. Dice avocado. Add cottage cheese.

  2. 2

    Incorporate chives/scallions, lemon juice, salt and pepper. Mix, partially mashing the mixture.

  3. 3

    Toast bread. Spread mixture on bread. Sprinkle pepper flakes if desired.
