I tried many recipe with leftover roti but this is my first tried to make samosa with leftover roti and it is very easy to make and tasty also.

I tried many recipe with leftover roti but this is my first tried to make samosa with leftover roti and it is very easy to make and tasty also.
Steps

In a pan add tbsp oil,heat up and add cumin seeds and asafoetida saute few seconds, add chopped onion,ginger and green Chilli. Saute 1 minute. Add all powder spices.

Add mashed potatoes and salt. Mix and cook for 2 minutes.transfer in a plate and allow to cool it. Take the leftover roti and fold it as shown in above pic and cut into four pieces.

In a bowl add maida and water to make slurry. Take one piece of roti apply slurry on the sides and fold it in samosa shape. fill some potato mixture in it.

Seal the edges by applying slurry. Make all samosa and fry them on medium to high flame until they turn golden and crisp k.

Transfer on kitchen towel and enjoy hot with chutney
