Stir in orzo, Boursin cheese, and cream cheese.

Cook on High until orzo is tender and liquid is absorbed, 35–40 minutes.

Stir in spinach until wilted. Adjust salt, pepper, and add lemon juice if desired.

Tips
For extra flavor, consider sautéing the mushrooms before adding them to the slow cooker.
