Ingredients

6 servings
  • 1.5 lbSkinless, boneless chicken breast
  • 1tsp, plus more to taste Kosher salt
  • 0.5tsp, plus more to taste Freshly ground black pepper
  • 1 can(about 14.5 oz) Italian-style diced tomatoes (canned)
  • 2 cupsChicken broth
  • 2 cupsOrzo pasta
  • 1 package (5.2 oz)Garlic and herb flavored Gournay cheese (such as Boursin)
  • 8 ozCream cheese
  • 5 ozBaby spinach
  • 1 tspLemon juice (optional)
  • 4 ozBella mushrooms
  • 0.5 cupArtichoke hearts
  • 1 bagsmall shrimp

Steps

  1. 1

    Place chicken in slow cooker; season with salt and pepper.

  2. 2

    Add tomatoes, chicken broth, mushrooms, and artichoke hearts.

  3. 3

    Cook on High for 2 hours or Low for 4 hours.

  4. 4

    Remove chicken, cut into 1-inch pieces, and return to slow cooker.

  5. 5

    Stir in orzo, Boursin cheese, and cream cheese.

  6. 6

    Cook on High until orzo is tender and liquid is absorbed, 35–40 minutes.

  7. 7

    Stir in spinach until wilted. Adjust salt, pepper, and add lemon juice if desired.

  8. 8

    Serve immediately.

Tips

For extra flavor, consider sautéing the mushrooms before adding them to the slow cooker.
