Ingredients

20 minutes
Serves 3 servings
  • 7–10 oz pork tenderloin, cut into bite-sized pieces (200–300 grams)
  • 1 tablespoonpanaeng curry paste
  • 5–6 kaffir lime leaves, thinly sliced
  • 1 cupunsweetened soy milk (250 ml)
  • 1 teaspoonpalm sugar
  • 2 teaspoonsfish sauce
  • 3–4 Thai bird’s eye chilies, thinly sliced
  • 1little water

Steps

20 minutes
  1. 1

    Heat a pan over low heat. Dissolve the curry paste in the soy milk. If it gets too dry, add a little water.

  2. 2

    Once the curry paste is dissolved, add the pork and stir until cooked through.

    Add palm sugar, fish sauce, chilies, and kaffir lime leaves.
