Nostalgic Kind of like Grandma's Zucchini Bread (high protein, low carb, sugar free)

My updated variant of am old-fashioned zucchini bread that uses Carbquik and protein powder instead of traditional flour and allulose instead of sugar. And with 7.75g of protein per slice when cut into 12 servings, this definitely qualifies as a high protein snack.
The ingredients list may be updated and modern but the flavor is 100% #oldfashioned

Preheat oven to 325°F. Grease 2 loaf pans with butter or cooking spray, or line pans with parchment paper.

In a large bowl mix together zucchini, Greek yogurt, allulose, and vanilla with a wooden spoon until thoroughly combined. Add oil and egg and mix well to blend in.

Add Carbquik, protein powder, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt. Stir until just incorporated and everything "looks wet". It's okay to have a few lumps.

Pour half of the batter into each loaf pan and sprinkle chocolate chips over the top of one or both loaves (they will sink as the bread bakes). Bake 45-50 minutes uncovered, swapping sides in oven halfway through baking.

Remove from oven and let cool 15 minutes in loaf pans. Remove from pans to wire rack to cool completely, or at least as long as you can stand, before cutting. Because slicing while still slightly warm and smearing with butter is delicious. Enjoy!
