  • 1 1/2 cupsBeets (cooked and diced)
  • 1 cupCorn kernels* (cooked)
  • 2 tbspExtra virgin olive oil
  • 1 tbspLemon juice
  • 1/4 cupCilantro (chopped)
  • 1 tspSalt
  • 1/2 tspBlack pepper

    Assemble all ingredients.
