Ingredients

  1. 120 ml (1/2 cup)Plain Greek yogurt
  2. 1sliced Avocado
  3. 300 g(about 2 cups) Cooked rice
  4. 1 tspHoney
  5. 2 tbspChopped cilantro
  6. To tastePaprika
  7. 2 tspTajín or everything but the elote seasoning
  8. To tasteJuice of 1 lime
  9. 1 tbspMayonnaise
  10. 30 g (1/4 cup)Grated cotija cheese
  11. 680 g(1 1/2 lbs), cut into bite-size pieces Chicken breast or thighs
  12. 225–375g (1 1/2–2 cups) Corn (canned or frozen)
  13. 1 tbsp+ extra for pan Olive oil
  14. 1/2 tspPepper
  15. 1/2 tspSalt
  16. 1 tspChili powder
  17. 1/2 tspCumin
  18. 1 tspGarlic powder
  19. 1 tspSmoked paprika

Cooking Instructions

    Toss chicken with olive oil, smoked paprika, garlic powder, cumin, chili powder, salt, and pepper.

    Heat a pan with olive oil. Cook chicken 5–7 min, stirring, until golden and cooked through.

    In a bowl, mix corn, Greek yogurt, cotija, mayo, lime juice, Tajín, paprika, cilantro, honey, salt, and pepper.

    Cook rice according to package instructions.

    To assemble, place rice in bowls, top with street corn mixture, chicken, avocado slices, and extra cilantro.
