Heat a pan with olive oil. Cook chicken 5–7 min, stirring, until golden and cooked through.

In a bowl, mix corn, Greek yogurt, cotija, mayo, lime juice, Tajín, paprika, cilantro, honey, salt, and pepper.

Cook rice according to package instructions.

To assemble, place rice in bowls, top with street corn mixture, chicken, avocado slices, and extra cilantro.
