Ingredients

4 servings
  1. 3 cupsCooked chicken (rotisserie)
  2. 1 BoxLasagna Noodles
  3. 2 cansCream of mushroom soup
  4. 2/3 cupMilk
  5. 1/4 teaspoonSalt
  6. 1/2 teaspoonPoultry seasoning
  7. 1 cupCottage cheese
  8. 6 ozCream cheese (softened)
  9. 1/3 cupChopped onion
  10. 1/3 cupChopped green pepper
  11. 1/4 cupChopped parsley
  12. 3 cupsShredded mozzarella cheese
  13. 1/2 cupItalian bread crumbs
  14. 1 tablespoonButter or oil (for sautéing)

Cooking Instructions

    Shred the cooked chicken and set aside.

    Sauté onion and green pepper in butter or oil until just crisp-tender.

    Mix soup, milk, salt, and poultry seasoning in a bowl.

    Blend cottage cheese and cream cheese, then add to the soup mixture.

    Add sautéed veggies, parsley, and chicken to the mixture.

    Cook lasagna noodles as directed and drain.

    Layer 1/4 of sauce, 1/4 of noodles, and 1/4 of chicken in a baking dish. Repeat layers.

    Top with mozzarella cheese and sprinkle with bread crumbs.

    Bake at 375°F (190°C) for 30 minutes or until heated through.
