  1. 250 gGround pork or beef (I actually think beef is better)
  2. 30 gPanko breadcrumbs
  3. 1 tspFresh ginger (grated)
  4. 2 tbspScallion whites (finely chopped)
  5. 1/4 tspBlack pepper
  6. 1 tbspSoy sauce
  7. 2 cupsCooked coconut rice
  8. 2 cupsBasmati rice
  9. 1 canCoconut milk
  10. Firecracker sauce
  11. Kewpi mayo
  12. Sweet Thai chili sauce
  13. Saracha
  14. Water

Steps

  1. 1

    Preheat oven to 425°F.

  2. 2

    Mix pork, panko, ginger, scallion whites, pepper, and soy sauce in a bowl.

  3. 3

    Shape into small meatballs and place on a baking sheet.

  4. 4

    Bake for 15-20 minutes until fully cooked.

  5. 5

    Serve hot meatballs over coconut rice. Top with scallion greens, sesame seeds, and firecracker sauce.

Tips

For extra flavor, consider adding a firecracker sauce or garnishing with scallion greens.
