Whole Amaranth Seeds also known as 'Rajgira' is a super grain which is highly nutritious. It is used in various ways either to make upma, halwa or ladoos.
I made Amaranth Seeds Pudding. Initially I wasn't aware of how it will turn out but cooking is all about experimenting and it went really well. ☺️Amaranth seeds are bit crunchy but can be tried once to make pudding as well. I used jaggery but you can use any sweetener and cook your way. So, check out the recipe below and give it a try!

Ingredients

2 servings
  1. 1 cupwhole Amaranth Seeds
  2. 3 CupsMilk
  3. 2 tablespoonsJaggery powder
  4. 7-8Saffron Strands
  5. 1/4 teaspoonCardamom powder
  6. 1/4 teaspoonNutmeg powder
  7. 2-3Black raisins/Cranberries

Steps

  1. 1

    To begin with wash, rinse and soak Amaranth for 4 to 5 hours. Then pressure cook for 3 to 4 whistles. Keep aside.

    Now, boil milk in a pan. Add cooked amaranth in a boiling milk stirring continuously to avoid forming lumps. Cook for 5 to 7 minutes.

    Then add jaggery powder, saffron infused water and cardamom powder. Mix well and cook for few minutes.

    Then add nutmeg powder and cook for 3 to 4 minutes and it is ready. Lastly, add nuts of your choice. Serve warm or chilled.
