I really like using a griddle to grill pork chops. When cooking them in a skillet, use just a little oil to avoid splattering and making a mess in the kitchen.

I really like using a griddle to grill pork chops. When cooking them in a skillet, use just a little oil to avoid splattering and making a mess in the kitchen.

In a mortar, mash the garlic, onion, oregano, and parsley well, or use an immersion blender if you prefer.
Add and mix in the cumin, paprika, pepper, salt, lemon juice, and olive oil to form a paste. - 2
Spread the marinade on both sides of the pork chops. If you have time, let the chops marinate for 1 hour at room temperature (if it's not too hot), or refrigerate and take them out 20 minutes before grilling.

Heat a griddle and brush with a little oil.
Sear and brown the pork chops on both sides until fully cooked.
Serve immediately. You can serve them with garden-style potato salad.
