Place the day-old bread in a small bowl with a little milk and water. Let it soak until softened.

Meanwhile, in another bowl, combine the chopped sun-dried tomatoes, drained tuna, halved olives, squeezed and crumbled bread, finely chopped shallot, torn basil leaves, salt, and pepper.

Mix well, then add the egg, Parmesan cheese, and breadcrumbs. Stir until combined—the mixture should not be too dry.

Shape the mixture into croquettes, roll them in breadcrumbs, and fry them in plenty of hot vegetable oil. When they are golden brown, transfer them to paper towels to drain. Enjoy!
