On cold days, a hearty soup like this really hits the spot, packed with plenty of vegetables. Instead of rice, I use wheat berries to make use of what I have on hand. Of course, it’s delicious with some sausages added in.

On cold days, a hearty soup like this really hits the spot, packed with plenty of vegetables. Instead of rice, I use wheat berries to make use of what I have on hand. Of course, it’s delicious with some sausages added in.

Check the lentils and wheat berries to make sure there are no small stones or foreign objects, then rinse with water. Heat a pot over medium heat with the oil and sauté the onion, garlic, carrot, squash, bell pepper, and celery together.

Add the broth or water with bouillon cubes, salt, parsley, lentils, wheat berries, and sausages. Bring to a boil, then reduce the heat and simmer for about 25 minutes, or until the lentils and wheat berries are tender. Let rest for about 5 minutes before serving.

Slice the sausages and serve with the soup.
