Mix jowar, maida, curd, oil, baking soda, and salt to form a dough. Rest for 30 minutes.

Mash boiled potatoes, add chopped onion, spices, and salt to make the stuffing.

Divide dough, fill with stuffing, and shape into kulchas.

Sprinkle kalonji and coriander leaves on top, press gently.

Brush water on one side of kulcha, place wet side down on hot pan.

Once bottom sticks, flip pan directly over flame to cook top for a tandoor effect.

Cook till golden brown. You can even Cook like chapati. Serve hot with sabji, or achar, or simple butter can also do.
Tips
For best results, ensure the dough is well-kneaded and rested. Adjust spices in the stuffing to your taste.
