Craving onion rings but didn't want to go to the shop or order.
Steps

Preheat oven to 220°C. Line a baking tray with foil and lightly oil it.

Slice red onion into thick rings and separate.

Mix flour, panko, Cajun, curry powder, paprika, onion granules, garlic powder, salt, black pepper, dried sage, crushed mustard seeds, and sugar in a bowl.

Beat eggs in a separate bowl.

Dip each onion ring in egg, then coat in flour-panko mixture. Dip again in egg, then again in flour-panko mixture.

Place rings on tray, making sure they do not touch.

Drizzle with olive oil.

Bake for 15 minutes until golden and crisp.
Tips
Make sure to leave space between the onion rings on the baking tray for even cooking.
