Ingredients

Makes one 12x12-inch (30x30 cm) pan
  1. 2 1/4 cupsall-purpose flour (about 280 grams)
  2. 2 1/4 cupsbread flour (about 280 grams, 260W)
  3. 1 7/8 cupswater (about 450 ml)
  4. 1 teaspoonfresh yeast (about 4 grams) or 1/4 teaspoon dry yeast (about 1 gram)
  5. 1 teaspoonextra virgin olive oil
  6. 2 teaspoonssalt (about 10 grams)
  7. For the brine:
  8. 3 tablespoonsextra virgin olive oil
  9. 6 tablespoonswater
  10. Pinchsalt

Steps

  1. 1

    Combine the flours, water, yeast, olive oil, and salt in the bowl of a stand mixer. Mix until you have a very soft dough—it will be sticky, that's normal. Let it rest for about 15 minutes, then do 3 sets of stretch-and-folds every 30 minutes.

    Let the dough rise for 1 hour, then refrigerate for 24 hours.

    The next day, spread the dough onto a 12x12-inch (30x30 cm) baking pan and let it rise for about 1 hour.

    After rising, bake in a preheated oven at 400°F (200°C) for 30 minutes. That's it!
