Combine the flours, water, yeast, olive oil, and salt in the bowl of a stand mixer. Mix until you have a very soft dough—it will be sticky, that's normal. Let it rest for about 15 minutes, then do 3 sets of stretch-and-folds every 30 minutes.

Let the dough rise for 1 hour, then refrigerate for 24 hours.

The next day, spread the dough onto a 12x12-inch (30x30 cm) baking pan and let it rise for about 1 hour.

After rising, bake in a preheated oven at 400°F (200°C) for 30 minutes. That's it!
