Rinse the moong beans thoroughly and soak them in water for 4-5 hours. Once they have expanded, drain the water and blend them in a mixer with ginger, green chili, and cumin seeds.

Finely chop all the vegetables as listed and grate the paneer.

Heat butter or cooking oil in a pan. Add the chopped green chili and ginger. Add the chopped onion and sauté until it turns light pink. Then add the chopped carrot.

After 2 minutes, add the chopped tomato and cook. Now add the bell pepper pieces as well.

Cook everything together for 2-3 minutes, then add all the listed spices and salt. Sauté well. The filling is now ready.

Heat a nonstick skillet and lightly grease it with ghee or cooking oil. Sprinkle a little water on it to make it smooth. On medium heat, pour 2 ladles of the batter onto the skillet and spread it out as shown. Drizzle a little ghee on top.

Cook lightly on the other side as well. Prepare as many moong crepes as needed. Assemble the vegetable filling, grated paneer, and chopped cilantro on each crepe as shown.

Roll them up and cut them diagonally like spring rolls.
