Upma is always a first choice for breakfast. There are many options to prepare it. Either Oats upma, Broken wheat upma, Rajgira upma, Foxtail millet upma and so on. I tried Vermicelli upma and paired it with few vegetables. Healthy, wholesome and perfect for tiffin box. Enjoyed by my son.

Steps

Heat oil in a pan. Add mustard seeds, cumin seeds and dry red chilli. Saute for few seconds. Add urad dal and asafoetida. Saute again. Add chopped onions, ginger, garlic and green chillies.

Saute till onions changes its color to light brown. Add turmeric powder and coriander powder. Mix well. Then add chopped tomatoes.

Add chopped vegetables and saute till slightly tender. Add roasted vermicelli and salt to taste.

Combine everything well. Add water and simmer till all the moisture has evaporated. Off the flame and rest for 2-3 minutes.

Lastly, add lime juice. Serve with chutney or as it is.
