Semolina Pancakes is a quick recipe that is perfect for kids lunch box. It can be prepared in a tadka pan, for that round shape like a bun. I preferred large pan as it was easier for me to prepare it in a large pan. Few days back, I tried this recipe in a tadka pan and the pancakes broke out while flipping and I ended up with a mess but this time they came out very nice and delicious too. The recipe isn't simple as it seems ☺️but do try and enjoy.

1 cupSemolina
1 cupCurd
1 teaspoonMustard Seeds
1 teaspoonUrad Dal
1Onion, chopped
1/2 teaspoonChilli Flakes (homemade)
1 tablespoonMixed Seeds (flax seeds, chia seeds or Sesame seeds)
1 teaspoonSalt (as per taste)
1/4 teaspoonBaking Soda
1 tablespoonOil

Blend Semolina, yogurt and water into a smooth batter. Transfer to a bowl. Cover and keep aside for 10-15 minutes.

Heat oil in a pan. Add Mustard seeds, urad dal and asafoetida. Saute for few seconds. Then add chopped onions. Saute till golden brown.

Pour this tempering into the batter. Add salt, red chilli powder mixed seeds and baking soda. Mix well.

Heat 1-2 tablespoon of oil in a pan and pour a ladleful of the batter. Cover and cook on low flame till one side is throughly cooked. Flip it and cook the other side too.

Enjoy with chutney or curd itself. Cut into slices to arrange in a tiffin.
