Take all the needed ingredients. Slice bittergourd into thin pieces.

Crush ginger, garlic, green chilli, and fennel seeds into a coarse paste.

In a bowl, add sliced bitter gourd, gram flour, rice flour, corn flour, red chilli powders, salt, and the crushed paste.

Pour in hot oil and mix well.

Sprinkle a little water and mix until the coating sticks but is not watery.

Cover and let it rest for 10 minutes.

Deep fry the coated bitter gourd slices and curry leaves in hot oil until crispy.

Drain on paper towels and serve.
Tips
Ensure the bitter gourd slices are thin for maximum crispiness.
