This delicious soya chunks curry is a Bengali delicacy perfect to accompany with roti , chapati , prepared without onion and garlic .
Steps

Soak soya chunks in hot water & salt for 10 minutes or until soft.

Then squeeze the water from the soya chunks & set aside.

Heat oil in a kadai, add potato cubes & saute over medium flame until slightly golden & then set aside.

In the same oil add cumin seeds, bay leaf, slitted green chillies, cardamom pods & cinnamon stick.

Let them crackle, then add chopped tomato, ginger, cumin paste & saute with some lukewarm water till the raw smell is gone.

Now add turmeric powder, salt, sugar, sprinkle some luke water & stir till the oil separates.

Now add the soya chunks & fried potatoes.Stir for a minute on medium flame.

Add warm water, mix well.Now transfer this to a pressure cooker & pressure cooker for 1 whistle.

Switch off the flame,open the lid, sprinkle ghee, the soya chunks curry is ready to serve.

Serve it hot with roti, parathas & enjoy the delicious, healthy dish.
