Collect all ingredients handy.

In a pan, dry roast cumin seeds, black pepper corns, cinnamon, and cloves on a slow flame. Add dry red chilies. Roast altogether till it turns crispy and aromatic. Stir constantly to avoid burning.

Transfer to a bowl. In the same pan, pour oil, and fry curry leaves. Transfer fried curry leaves to the same bowl.

Now roast coriander seeds till they turn crispy and golden and a distinct aroma comes out. It will take a couple of minutes.

Now mix all the roasted spices in a pan. Mix well. Turn off the gas. Wait till it cools down completely. Grind in a grinder or mixer in batches.

The aromatic golden brown coriander and cumin seeds powder is ready. Store in an airtight container for months to a year.
