Did you know chicken hearts are lean and packed with protein? High in iron, B12, B2, and B3 which is good with people with anemia!
This is one of my favorite favorites of eating them, stir-fried with preserved veggies! Also a very good snack while drinking beer!

All the ingredients needed in photo form.

Cut fat off chicken hearts. Bring a pot of water to a boil, add 2 of slices of ginger, green onions and a splash of cooking wine 3. Blanch chicken hearts for 2 mins or until they change color. Drain and wash with cold water.

Dice garlic and preserved vegetables.

Heat oil in wok and add sliced jalapeños, garlic, and chili paste. Stir until fragrant.

Add in chicken hearts and stir-fry on medium high heat for 3 mins.

Turn heat to medium, add in soy sauce, oyster sauce, shoaxing wine, black vinegar, sugar, and white pepper. Stir fry for another 2 mins.
