Ingredients

  1. 2eggs
  2. 100 gcanned or fresh tomatoes, chopped
  3. 1/4red bell pepper, diced
  4. 1small onion, diced
  5. 1 clovegarlic, minced
  6. 1 teaspoonolive oil
  7. 1/4Smoked paprika
  8. 1/4Ground cumin
  9. Chilli flakes
  10. Salt & pepper
  11. Fresh parsley or coriander for garnish

Steps

  1. 1

    Heat olive oil in a skillet over medium heat

  2. 2

    Add onions and bell pepper-sauts for 4 minutes until soft

  3. 3

    Add garlic, paprika, cumin, tomatoes-simmer for 5 min unril slightly thickened

  4. 4

    Crack eggs in it, cover with a lid and cook for 4-6 minutes for runny yolks, longer for firmer yolks

  5. 5

    Season to taste
