Gradually add water to besan and make a medium thick batter. Whisk it for 8-10 mins till batter is little light and it's colour also changes slightly. Give it a rest for 10 mins.

Heat oil or ghee in kadai. Keep a strainer with holes 2-3 inches high, over the kadai. Pour batter on strainer, don't shake it. Let batter droplets drop in oil. Fry bundis at medium flame. Prepare all the bundis similarly.

In another kadai, add water to sugar and prepare a sugar syrup. Don't make any strands. Just till sugar melts and syrup is little sticky like honey.

Add saffron and elaichi powder to the syrup. Add all the bundis to the syrup.

Also add chopped dryfruits and stir it on a low flame till sugar syrup is absorbed.

Garnish with some dryfruits and rose petals.Our Sweet Bundi is ready for Navratri Prasad. It can be served hot or cold.
Tips
Prepare the batter carefully. Not too thick, nor too runny. Medium thick, flowy consistency. And don't make sugar syrup thick. Bundis won't absorb it properly.
