OK you know I travel ALOT and many places sell Borscht and each family has THEIR version. I am lucky to have had some in amazing places and this is my version. Sorry to all my Ukrianian freinds if I missed an ingrediant your Grandma always put in but you will love it anyways lol - ENJOY :P

Ingredients

40 mins
4-6 portions
  1. 2Large beetroot, peeled and grated
  2. 3 Tbspolive oil
  3. 2medium waxy potatoes, peeled and cubed
  4. 4 cupschicken broth - you can use water and 2 stock cubes
  5. 1carrot, peeled and thinly sliced
  6. 1/2Large White Onion Finely diced
  7. Extra Flavours:-
  8. 1 canwhite cannelini beans with their juice
  9. 2bay leaves
  10. 2 Tbspwhite vinegar
  11. 1/2 tspsea salt
  12. 1/2 tspblack pepper, freshly ground
  13. 1large garlic clove, pressed
  14. 3 Tbspchopped dill
  15. 2 TbspTomato Ketchup
  16. 1/2 TbspCelery Salt

Steps

  1. 1

    I use a food processor - its fast and so easy to clean but you can chop all by hand and still perfect.

    Peel the Beetroot and chop off the bottom root then slice in half. Then Grate in Processor. Transfer to a large pot with 2 Tbsp of Olive oil and cook on medium for 7-10 mins until soften.

    Next peel carrots and Thick Slice in Processor. Transfer Bowl. Then same witn Onions. Peel and Dice the Potato.

    Once Beetroots soft add onion and turn up heat for 2 mins then add carrots and potatos and stock. Reduce to medium Cook with lid for about 15 mins until all soften.

    Now add everything else to the pot and cook for another 3-5 mins - serve hot with Sour Cream / syr (I used reduced cottage cheese see other recipe) - ENJOY :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
