Rice Paper Pastry Hack

This is just a hack for a low calorie pastry! It’s not buttery like puff pastry or croissant dough, but it gives you a deliciously crisp, golden shell that works great for both sweet and savory fillings. Overall, it’s light and not heavy or greasy.
I just used leftovers for this recipe, but I think it would go so well with a Philly cheesesteak filling!

Steps
- 1
All the ingredients needed in photo form.
- 2
Create filling mixture. I used vermicelli noodles, imitation crab, corn, egg, and green onions. Seasoned with soy sauce and sesame oil. You can honestly use any fillings you like for this recipe. I think something more cheesy and rich would taste best especially hot pocket fillings.
- 3
Whisk together eggs, milk, and olive oil.
- 4
Dip entire rice paper in mixture for about 20 seconds. Repeat this and stack 3 sheets of rice paper together (3 sheets makes 1 'pastry').
- 5
Add fillings and roll it like a burrito.
- 6
Optional- sprinkle sesame seeds or cheese on top.
- 7
Bake at 350F for 15-20 mins. Enjoy fresh because it doesn't reheat well! The longer it sits, the harder the rice paper will get.
