Ingredients

Total Time: 45 Minutes (Including Prep & Cooking)
Serves: 18 Kebabs
  • To Blend in Food Processor / Blender:
  • 450 gBoneless Chicken Breast (marinated with lemon juice, salt & black pepper)
  • 1/2 cupShallots, sliced
  • 3 -inch piece Ginger, grated
  • 2 tbspGarlic, minced
  • 6Green Chilies, chopped in halves
  • 1/4 cupMint Leaves
  • Small bunch of Coriander Leaves
  • 1 tspBlack Pepper Powder
  • 1 tspMixed Herbs
  • 1 tspOregano
  • 1/2 tspTurmeric Powder
  • 1 tspSpicy Red Chili Powder
  • 1 tspCoriander Powder
  • 1 tspRoasted Cumin Powder
  • 1 tspGaram Masala Powder
  • Additional Ingredients:
  • 1 tspChili Flakes
  • 2 tbspMint Leaves, finely chopped
  • 2 tbspCoriander Leaves, finely chopped
  • Salt, to taste
  • 2Potatoes, steamed and grated
  • For Coating (Optional):
  • 1/2 cupBreadcrumbs
  • For Cooking:
  • Olive Oil or any Cooking Oil, as required (for shallow frying)
  • Butter, as required (optional, for added flavor)

Steps

Total Time: 45 Minutes (Including Prep & Cooking)
  1. 1

    Marinate the Chicken (Optional but Recommended):
    Marinate the chicken breast with 1 tablespoon lemon juice, black pepper, and salt for 15–20 minutes.

    Prepare the Kebab Mixture:
    Drain and chop the chicken. Add it to a food processor along with shallots, ginger, garlic, green chilies, mint leaves, coriander leaves, and all the spice powders — black pepper, mixed herbs, oregano, turmeric, red chili, coriander, cumin, and garam masala.
    Blend everything into a smooth, thick paste.

    Mix and Combine:
    Transfer the blended mixture into a large bowl. Add chili flakes, finely chopped mint and coriander leaves, salt, and steamed grated potatoes.
    Mix well until the mixture binds together into a dough-like consistency.

    Shape the Kebabs:
    Lightly grease your hands with oil. Take small portions of the mixture, roll into balls, and flatten gently to form round kebabs.

    Coat (Optional):
    Roll each kebab in breadcrumbs for a crispy outer layer. Skip this step if you prefer a soft texture.

    Cook the Kebabs:
    Heat olive oil (or any cooking oil) in a pan over low-medium flame. Shallow fry the kebabs on both sides until golden and crisp — about 6–8 minutes per side.
    Optionally, brush or drizzle a little butter while frying for extra flavor.

    Serve:
    Serve hot with fresh green chutney and a vibrant vegetable stir-fry made with olive oil, onion slices, carrot julienne, red-yellow-green bell pepper strips, salt, pepper, chili flakes, oregano, and a dash of vinegar.

    Storage Tip:
    You can prepare these kebabs in advance and store them in the freezer for up to a month. Simply thaw and shallow fry when ready to serve.

Tips

For added juiciness, add a tablespoon of hung curd to the chicken mixture before shaping.

You can also bake or air-fry these kebabs for a healthier version.
