Marinate the Chicken (Optional but Recommended):
Marinate the chicken breast with 1 tablespoon lemon juice, black pepper, and salt for 15–20 minutes. - 2
Prepare the Kebab Mixture:
Drain and chop the chicken. Add it to a food processor along with shallots, ginger, garlic, green chilies, mint leaves, coriander leaves, and all the spice powders — black pepper, mixed herbs, oregano, turmeric, red chili, coriander, cumin, and garam masala.

Mix and Combine:
Transfer the blended mixture into a large bowl. Add chili flakes, finely chopped mint and coriander leaves, salt, and steamed grated potatoes.
Mix well until the mixture binds together into a dough-like consistency. - 6

Shape the Kebabs:
Lightly grease your hands with oil. Take small portions of the mixture, roll into balls, and flatten gently to form round kebabs. - 9
Coat (Optional):
Roll each kebab in breadcrumbs for a crispy outer layer. Skip this step if you prefer a soft texture. - 10

Cook the Kebabs:
Heat olive oil (or any cooking oil) in a pan over low-medium flame. Shallow fry the kebabs on both sides until golden and crisp — about 6–8 minutes per side.
Optionally, brush or drizzle a little butter while frying for extra flavor. - 13

Serve hot with fresh green chutney and a vibrant vegetable stir-fry made with olive oil, onion slices, carrot julienne, red-yellow-green bell pepper strips, salt, pepper, chili flakes, oregano, and a dash of vinegar. - 19

Storage Tip:
You can prepare these kebabs in advance and store them in the freezer for up to a month. Simply thaw and shallow fry when ready to serve.
Tips
For added juiciness, add a tablespoon of hung curd to the chicken mixture before shaping.
You can also bake or air-fry these kebabs for a healthier version.
