Mix onions, salt, turmeric, ajwain, cumin powder, green chilli and coriander powder in a bowl.

Let rest for 5 minutes — onions will release moisture.

Gradually add besan to form a thick coating batter.

Heat oil on medium flame in a deep pan.

Drop small portions into hot oil and fry until golden brown.
Remove and place on a plate. - 6
Take one Piyaji at a time, press a small round mold (Vattaki) on top, and fry again for perfect round shape.

Drain excess oil.Serve hot with Schezwan sauce, mayonnaise & Red chilli jam...

Tips
1) Slice onions very thin for maximum crispiness.
2) Let the onion-spice mix rest for better coating.
3) Fry on medium flame to get evenly golden Piyaji.
4) Press gently with the Vattaki to avoid breaking.
5) Serve immediately for the best crunch.
