Florida Avocado Guacamole

A friend brought me the enormous avocado the size of a coconut one day. Wasn’t ripe enough to use yet so I put it in a paper bag with a red pear and waited 3 days and when it was ripe enough I decided to make guacamole! Don’t sleep on Florida avocados folks. I think personally they are better than the Haas avocados. Much sweeter.

Steps
- 1
Cut avocado in half, remove pit, and scoop flesh into a bowl.
- 2
Dice tomatoes, removing seeds and juice, and add to bowl.
- 3
Finely chop onion, jalapeño and cilantro; add both to bowl.
- 4
Squeeze lime juice over ingredients. Add salt and pepper.
- 5
Stir gently until combined but still chunky.
- 6
Press freezer wrap directly onto guacamole surface, cover bowl, and chill 8 hours.
Tips
Ensure the avocado is just ripe enough to have a small bit of give when pressed. Pressing the freezer wrap directly on the guacamole prevents it from turning brown.
