Add oil to a frying pan on medium-low heat. Add onions and peppers, season with salt and pepper, and tuck in bay leaves. Cook, stirring, for 30 minutes, or until soft and golden. Stir in sugar and vinegar, remove bay leaves, and set aside.

Heat oven to 180C/gas 4. Heat frankfurters in boiling water as per pack instructions. Slice open buns. Drain hot dogs, allow to steam dry. Divide cheese between buns, slip 2 sausages into each, then top with sweet-and-sour onions and peppers.

Place assembled buns in a baking tray. Cover with foil and bake for 5 minutes, or until cheese is oozy and stringy. Remove from oven, unwrap, and serve.
Tips
For an extra twist, you can add a layer of mashed potatoes inside the buns when assembling the hot dogs.
