Singhara or water chestnut are super foods which are rich in plant protein, calcium, iron , vitaminA, B complex and essential micro minerals. They are a rich source of fiber and a great teatime snack in your weightlossdiet. They are abundantly available right now and there is no better way to enjoy them than making a spicy chaat and popping them to control hunger pangs. On the occasion of Kartiki Ekadashi and also to promote plant based food for the breast cancer awareness week, I have chosen to showcase this Healthy, plant based recipe. Steps
- 1
First, wash and pat dry the singhara. Then take a microwave safe Borosil bowl, add the singhara pieces and microwave for 2 minutes on high. Let it rest inside for 5 minutes.
- 2
Then remove the outer cover of singhara. Coat them with all the mentioned spices, a few drops of lemon juice and keep covered for 10 minutes.
- 3
Heat a pan. Add the ghee or peanut oil if you are vegan, cumin seeds, green chillies and saute for 1/2 a minute. Add the singhara pieces and saute well for a minute.
- 4
Switch off the heat and remove to a serving bowl. Drizzle more lemon juice on top. Garnish with chopped coriander leaves and serve immediately as a side dish for your vrat ki thali. Shubh ekadashi to all.
Tips
Make sure that the singhara remain crunchy and not become very soft.
You can add roasted peanut powder for extra crunch.
