Ingredients

Total Time: 10 minutes
Servings: 1 cup
  • 200 gmsraw pumpkin seeds
  • 1 tspolive oil or ghee
  • 1/4 tspturmeric powder
  • 1/2 tspred chili powder (adjust to taste)
  • 1/2 tspchaat masala
  • 1/4 tspblack salt
  • 1 pinchcumin powder (optional)
  • Salt to taste

Total Time: 10 minutes
  1. 1

    To roast:
    Heat a pan on low-medium flame. Add pumpkin seeds and dry roast for 6-8 minutes until they start popping slightly.

    To season:
    Add olive oil or ghee, followed by all the spices and salt. Toss well so the seeds are evenly coated.

    To crisp:
    Roast for another 1–2 minutes on low flame till crisp and aromatic.

    To cool:
    Allow to cool completely before storing in an airtight jar.

Tips

Adjust spice levels to taste or try other seasonings like peri-peri, garlic powder, or black pepper.

Store in an airtight jar for up to 2 weeks in a cool, dry place.

For a lighter version, skip the oil and dry roast with just a hint of salt and spice.
