An easy and simple recipe flavoured rice recipe made with long grain rice. A choice of vegetables and fresh herbs. It is one of the popular rice variants of choices of many indians. It's served in a dinner time.
Steps

Wash and soak Basmati rice for 10 minutes. Wash and peel carrot, potato.

Chopped tomato, capcicumand onion., cut cauliflower and potato.

Heat oil in a pressure cooker. Add cumin seeds, asafoetida dry red chilli, bay leaf, cloves, cinnamon stick, anise, green Cardamom and black pepper. Add chopped onion. Saute it well.

Add chopped tomatoes, potato, carrot, capsicum and green peas. Add grated ginger and green chilli garlic paste. Saute it well.

Saute and mix all vegetables for 2 minutes. Then add soaked rice. Remove water. Mix rice with vegetables.

Then add salt as per taste, turmeric powder, red chilli powder and pav bhaji masala.

Add 2 Cup of water. Cover the lid and make 3 Whistles. Let it cool. Open the pressure cooker. Vegetable pulao is ready to serve. Mix well. Sprinkle chopped green coriander.

Serve hot with simple curd and udad papad.It's very delicious. You can use any vegetables of your choices.
Tips
Pavbhaji masala in a pulao gives an extra flavour.
