After boiling the chicken, use the broth to make this noodle soup. You don't need chicken meat or giblets for this recipe. Smash the ginger root and add it to the chicken broth, then bring to a boil.

Soak the glass noodles in cold water for 5 minutes, then drain and cut into pieces about 4 inches (10 cm) long.

When the broth is boiling, add the noodles, cover, and immediately turn off the heat. Add green onions and cilantro, then serve right away. Enjoy this traditional and simple chicken broth glass noodle soup with lime leaves for extra flavor.
